  • 3 tablespoons tomato purée

  • 12 tablespoons cooking oil

  • 450 ml/¾ pint water

Instructions:

  1. Prepare the Aubergines: Start by cutting a 5 cm (2 in) slit into the middle of each aubergine. Sprinkle salt inside and let them sit for 15 minutes. The salt will help draw out any bitterness. Meanwhile, heat olive oil in a large pot to prepare the vegetable filling.

  2. Sauté the Vegetables: Add the garlic, green peppers, and onions to the pot. Stir-fry for a few minutes, cooking the onions until they soften but don’t brown. Then, add the sliced tomatoes, tomato purée, salt, cayenne pepper, and allspice. Let everything simmer for about 5 minutes, allowing the flavors to meld. Stir in chopped parsleybefore turning off the heat and setting the mixture aside.

  3. Prepare the Aubergines: After the aubergines have sat for a few minutes, rinse them thoroughly to remove the salt and pat them dry. Heat cooking oil in a frying pan and gently fry the aubergines, turning them occasionally, until the flesh softens. Be careful not to break the aubergines as they cook.

  4. Stuff the Aubergines: Once the aubergines are tender, use a slotted spoon to remove them from the pan and place them slits-up in an ovenproof dish. Open the slits carefully and spoon the prepared onion mixture into each aubergine. Pour any leftover mixture over the top and add water around the aubergines.

  5. Bake to Perfection: Place the dish in a preheated oven at 190°C (375°F, gas mark 5) and bake for about an hour, or until the aubergines are cooked through and the flavors have melded beautifully.
