Ingredients:
450g/1 lb dried chickpeas (soaked overnight)
3 cloves garlic, peeled
300ml tahini (about ½ pint)
1 tsp chili pepper
3 tsp salt (adjust to taste)
2 tsp ground cumin
Juice of 2 fresh lemons
Instructions:
Prep the Chickpeas: Start by rinsing your soaked chickpeas thoroughly under cold running water. Then, place them in a large saucepan, covering them with cold water about three-quarters of the way. Bring to a boil, then reduce the heat and simmer until the chickpeas are tender, about 1-1.5 hours. As the chickpeas cook, skim off any foam that forms on the surface. If needed, add more water to ensure they stay submerged.
Rinse and Purée: Once the chickpeas are soft, drain them in a colander and rinse under cold water to stop the cooking process. Set aside some whole chickpeas for garnish, and purée the remaining chickpeas until smooth. Use a blender or food processor, adding just enough water to help the blending process. Be careful not to add too much water, as it could make the hummus runny.
Blend in the Flavors: While blending, add garlic cloves to ensure they're evenly incorporated into the hummus. Once your chickpeas are fully puréed, transfer the mixture to a large bowl. Stir in tahini, chili pepper, cumin, salt, and lemon juice. Adjust the seasoning to your taste — whether you like it spicier or more tangy, you can tweak the flavors to perfection.
Garnish & Serve: To serve, spoon the hummus into a large dish or individual bowls. Use the back of a spoon to create a small hollow in the center, then drizzle olive oil and a bit of lemon juice into the hollow. For extra flair, garnish with a sprinkle of cumin, red pepper flakes, chopped parsley, and a few whole chickpeas.
