Updated: Nov 8, 2024

If you're craving a fresh, flavorful, and easy-to-make salad, look no further than this Burghul Salad with Walnuts and Spices. Burghul, a whole grain made from cracked wheat, is the base of this hearty salad, giving it a satisfying texture and a wonderful nutty flavor. Tossed with aromatic spices, crunchy walnuts, and fresh parsley, this salad is a delicious blend of savory, spicy, and tangy flavours. It’s the perfect side dish for grilled meats, or can stand alone as a light meal.

Why You’ll Love This Salad:

  • Fresh and Zesty: With a handful of simple ingredients like onions, parsley, and radishes, this salad brings the freshness of the Middle East to your plate.

  • A Nutty Twist: Walnuts add a satisfying crunch, making every bite interesting. They also pair wonderfully with the warm spices, especially cumin and cayenne pepper.

  • Quick and Easy: It takes just a few simple steps to prepare, and the chill time in the fridge ensures the flavors meld together perfectly. You’ll have a crowd-pleasing dish ready in no time!

  • Nutritious & Filling: Burghul is rich in fiber and protein, and combined with the healthy fats from olive oil and walnuts, this salad is as filling as it is nourishing.

Ingredients:

  • 100 g (4 oz) fine burghul

  • 4 tablespoons olive oil

  • ½ onion, finely chopped

  • ½ teaspoon oregano

  • ½ teaspoon coriander

  • ½ teaspoon allspice

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 3 tablespoons parsley, finely chopped

  • 2 tablespoons walnuts, finely chopped

  • ½ teaspoon cumin

  • ½ teaspoon cayenne pepper

  • 50 g (2 oz) tomato purée, diluted in 2-3 tablespoons water

Garnish:

  • Black olives

  • Lettuce leaves

  • 3-4 radishes, thinly sliced

Instructions:

  1. Rinse and Drain the Burghul: Place the burghul in a bowl and rinse it several times in clean water. Drain well and set aside. After soaking for about 5 minutes, squeeze out any excess water from the burghul.

  2. Sauté the Onion: In a small skillet, heat olive oil and sauté the onion for a few minutes, or until soft and translucent. This will help bring out the onion's natural sweetness and depth of flavor.

  3. Combine Ingredients: Add the sautéed onion (along with the olive oil) to the burghul. Then, add the oregano, coriander, allspice, salt, black pepper, parsley, walnuts, cumin, and cayenne pepper. Mix everything together until well combined.

  4. Chill: Let the salad chill in the fridge for at least 30 minutes. Chilling helps the flavors meld together and gives the burghul time to absorb the spices and oil.

  5. Garnish and Serve: Just before serving, spoon the salad onto a platter lined with lettuce leaves. Garnish with black olives, and arrange radishes on top for a beautiful pop of color.

This Burghul Salad with Walnuts and Spices is a versatile dish that can be enjoyed at any time. It’s perfect as a light, healthy lunch, or as part of a larger spread for dinner.
